This is a premium New Zealand Frenched Lamb Rack, perfect for that date night. This is a traditional rack which has the cap on which is a layer of fat covering the loin. The rib bones are cleaned and trimmed down to the loin. This cut is very tender and best served medium rare.
Each rack has 7/8 cutlets. Minimum 400gm per rack.
